Immune-loving mushroom soup (vegan & dairy-free)
A comforting winter warmer with nourishing mushrooms + creamy cashews


Looking for a plant-powered recipe to warm you from the inside out? This immune-loving mushroom soup is your go-to for the colder months. Packed with nourishing ingredients and rich in umami flavour, it’s a hug in a bowl — and a perfect way to support your wellbeing naturally.
We’ve given this recipe a Flora & Fauna twist using our favourite wellness pantry staples from Nutra Organics and more.
What you'll need
Soup base:
- 1 cup organic cashews
- 10 large Portobello mushrooms
- 1 leek, chopped
- 1 white onion, chopped
- 4 garlic cloves, crushed
- 1 Tbsp plant-based butter or olive oil
- 1 Tbsp extra-virgin olive oil
- 6 sprigs fresh thyme (or 1 tsp dried thyme)
- 3 cups boiling water
- 2 Tbsp Nutra Organics broth
- 1-2 tsp reishi mushroom powder
- 2 tsp savoury yeast flakes
- Celtic Sea Salt + cracked pepper, to taste
Umami mushroom topper:
- 10 button mushrooms, sliced
- 1 tsp olive oil
- 1 tsp tamari soy sauce
- 2 sprigs thyme
To garnish:
- Spring onion & chopped parsley
- Mixed seeds
- More yeast flakes
- Organic Gold Hemp Seed Oil for drizzling
- Your fave toast or crusty bread
Method

Soak the cashews
Cover cashews in boiling water and set aside to soften. -
Make the umami mushroom topper
Sauté button mushrooms with tamari, thyme, and honey in olive oil until caramelised. Set aside. -
Cook the soup base
In a large pot, sauté the leek, onion, and garlic in butter or oil until soft. Add sliced portobello mushrooms, thyme, salt, and pepper. Cook for 10 mins until browned and fragrant. -
Add broth & simmer
Pour in boiling water and the Nutra Organics broth. Simmer for 10 minutes, covered. -
Blend to creamy perfection
Add reishi powder, soaked (drained) cashews, and yeast flakes. Blend with a stick blender until velvety smooth. -
Garnish & enjoy
Serve topped with umami mushrooms, seed mix, spring onion, and a drizzle of hemp seed oil. Enjoy with your favourite bread on the side.
