Looking for a plant-powered recipe to warm you from the inside out? This immune-loving mushroom soup is your go-to for the colder months. Packed with nourishing ingredients and rich in umami flavour, it’s a hug in a bowl — and a perfect way to support your wellbeing naturally.

What you'll need

Soup base:

  • 1 cup organic cashews
  • 10 large Portobello mushrooms
  • 1 leek, chopped
  • 1 white onion, chopped
  • 4 garlic cloves, crushed
  • 1 Tbsp plant-based butter or olive oil
  • 1 Tbsp extra-virgin olive oil
  • 6 sprigs fresh thyme (or 1 tsp dried thyme)
  • 3 cups boiling water
  • 2 Tbsp Nutra Organics broth
  • 1-2 tsp reishi mushroom powder
  • 2 tsp savoury yeast flakes
  • Celtic Sea Salt + cracked pepper, to taste 

Umami mushroom topper:

  • 10 button mushrooms, sliced
  • 1 tsp olive oil
  • 1 tsp tamari soy sauce
  • 2 sprigs thyme 

To garnish:

  • Spring onion & chopped parsley
  • Mixed seeds
  • More yeast flakes
  • Organic Gold Hemp Seed Oil for drizzling
  • Your fave toast or crusty bread 

Method 

  1. Soak the cashews 
     Cover cashews in boiling water and set aside to soften.
  2. Make the umami mushroom topper 
     Sauté button mushrooms with tamari, thyme, and honey in olive oil until caramelised. Set aside.
  3. Cook the soup base
    In a large pot, sauté the leek, onion, and garlic in butter or oil until soft. Add sliced portobello mushrooms, thyme, salt, and pepper. Cook for 10 mins until browned and fragrant.
  4. Add broth & simmer
    Pour in boiling water and the Nutra Organics broth. Simmer for 10 minutes, covered.
  5. Blend to creamy perfection
    Add reishi powder, soaked (drained) cashews, and yeast flakes. Blend with a stick blender until velvety smooth.
  6. Garnish & enjoy
    Serve topped with umami mushrooms, seed mix, spring onion, and a drizzle of hemp seed oil. Enjoy with your favourite bread on the side.
